Beyond the Black Stump Sauce
This is my version of Worcestershire Sauce, although Worcestershire is a trademark and cannot be used. With a dark blackish colour, Beyond the Black Stump seemed an appropriate name. It is made with orchard fresh plums and golden syrup or treacle. It may be used as a marinade as is quite thin, but best of all, grilled steak and chops just haven’t enough flavour without it! Pour the sauce on after you have cooked the meat, sausages, eggs, even meat pies. Serving suggestion: Marinate chicken with thyme and tomatoes.
