Chilli Eggplant Kasundi


Kasundi is an Indian oil pickle. Chutneys are made using vinegar, but Kasundi has extra virgin olive oil as well as vinegar. Made with locally grown Capel eggplant or aubergine as they are sometimes called, lots of spices and hot chillies. The consistency is like a paste so it spreads easily. This is one for chilli lovers, the ordinary person will find it far too hot. Mix with yogurt to serve as a milder accompaniment with curry and rice or as a dip.
