Preserved Lemons


Chefs use preserved lemons in many dishes, but when people want to try out their recipes, then preserved lemons can't be found in the shops. From my daughter's Eureka lemon tree natured by her happy chooks this simple preserve using salt, has unique flavour and a silken texture, with no spices so customers can add their own depending on what they are cooking. Preserved lemons originated in Morocco or the middle east so use in tagine cooking, add a zesty flavour to chicken, lamb, salads, couscous and vegies.
